Begun Bhaja are pan fried or shallow fried marinated slices of Aubergines. This is a Bengali dish and there are a lot of variations to this recipe. To make the Baingan Bhaja you need the large variety of eggplant similar to the one which we use for Baingan Bharta. The larger varieties have less seeds and more flesh.

Preparation Method
- 1 Cut the aubergines lengthwise.
- 2 Rub in Salt and Turmeric Powderr. Heat the Mustard Oil in a frying pan.
- 3 Add the pieces of aubergine to it and keep turning the sides to cook evenly on either side.
- 4 Serve hot.
