Mix vegetable khichdi is a simple recipe for preparing the popular rice and lentil based recipe called khichadi. Added vegetables to the dal and rice mixture makes the vegetable khichadi a complete meal in itself. Enjoy with fresh curds.

- 1 Mix brown basmati and whole Red Lentils in a large bowl and mix together.
- 2 Add Water to it, swirl a couple of times and drain the Water. Repeat once.
- 3 Place the Rice and lenTils in a large pan with the Bay Leaf and sufficient Water to cook the Rice and lenTils and simmer on medium heat unTil the Rice and lenTils are cooked and not mushy. (Or place the Rice, lenTils and Bay Leaf with Water in the Rice cooker and cook unTil done. This is what I did and it turned out perfectly)
- 4 Remove the Bay Leaf and discard.Keep the Cooked rice and lenTils aside.
- 5 Heat Ghee in a heavy bottomed pan and add Cumin Seed to it.
- 6 When the seeds start crackling, add Asafoetida, Turmeric Powderr powder and quickly saute for a second.
- 7 Add cut Onion and saute unTil the Onion turn transparent.
- 8 Add vegetables and sprinkle a little Water, a pinch of Salt and cook unTil the vegetables are soft but not mushy.
- 9 Add the Cooked rice and lenTils to it, add Chili powder, Salt to taste and mix well.
- 10 Let it heat on low all the way through for a few minutes.
- 11 Garnish with Cilantro and serve hot with raita and papad.
