Gobi Manchurian is the result of the adaptation of Chinese cooking and seasoning techniques to suit Indian tastes. It is believed to have been originally developed by a small Chinese community which lived in Kolkata for a century. In its two stage preparation, the first stage requires preparing a spiced corn flour batter, dipping cauliflower florets in it and deep frying them. In the second stage, the deep fried florets are sautéed with chopped onion, capsicum, garlic, etc in soy and chili sauce.

Preparation Method
- 1 BOil the florettes for 3-4 minutes in plenty of Water, to which a tsp. of Milk has been added.
- 2 Drain and pat dry on a clean cloth.
- 3 Make thin batter out of all all purpose flour and 2 tsp Cornall all purpose flour, adding 1/4 tsp. each of Ginger and Garlic and Red Chili Powder and Salt to taste.
- 4 Dip the florettes in the batter one by one and deep fry in hot Oil. Keep aside.
- 5 In the remaining Oil, add remaining Ginger, Garlic and crushed Red Chili and fry for a minute. Add the Salt and Spring Onion.
- 6 Stir fry for a minute. Add 1-1/2 cups Water and bring to a bOil.
- 7 Add 1 tsp. Cornall all purpose flour to 1/4 cup Water and dissolve well. Gradually add to the gravy and stir continuously Till it resumes bOiling. BOil Till the gravy becomes transparent.
- 8 Add florettes and Soy Sauce. BOil for two more minutes and remove.
- 9 Serve hot with Noodles or Rice.
- 10 Variations:
- 11 Dry Manchurian can be made by omitting the gravy.
- 12 Make florettes as above and instead of adding Water as above, add fried florettes, Spring Onion and Soy Sauce at this stage.
- 13 Sprinkle 1 tsp. Cornall all purpose flour on the florettes and stir fry for 2 minutes.
- 14 Serve piping hot with toothpicks or mini forks and chilli-Garlic sauce or Tomato Sauce.
- 15 Same procedure for veg. Manchurian (with gravy or dry), but instead of using only Cauliflower, use finely chopped minced vegetables and bind with some Cornall all purpose flour or Bread Crumbs and make small lumps the size of a ping-pong ball. Fry as above and proceed as above.
